From southern India, using the day’s fresh vegetables and coconut, whole mustard and curry leaves - a nice and crunchy dish.
Bhindi Jaipuri ~ Rajasthan
Crispy fried okra and onions and tossed with spices.
Baingan Bhurta ~ Northern India
Mashed aubergine/eggplant, cooked in onion, fresh ginger, garlic and mild spices.
Dal Makhani ~ Punjab
Stewed pulses/legumes with butter and light cream.
Tadka Dal ~ Popular all over India

Sag Pannir or Palak Pannir ~ Punjab

Spinach cooked with home made cheese cubes, spices, and fenugreek leaves.
Brinjal Kalwa ~ Gujerat
Aubergines/Eggplants,
Typical Gujerati preparation –the eggplants are sliced and roasted, then tossed in a special paste. They are hot and savory with a hint of sweetness.
Aviyal ~ Kerala
Long cut assorted veggie's cooked in mild coconut sauce.
Most popular veggie dish in Kerala. Prepared for almost every special event and festival.

Assorted evenly diced vegetables cooked in mild cashew and coconut thick curry.
Navaratan korma - similarly prepared with nine main ingredients.
Aloo Dum Kashmiri

Vegetables Jhal frizi ~ Bengal
Jhal means spicy hot in Bengali. This dish was invented during the British Raj and is prepared with chicken or mutton with cross-cut vegetables, stir-fried and sautéed with a thick sauce.
Aloo Gobi ~ northern India
Potatoes and cauliflower cooked in ginger, garlic, and onion sauce with blended spices.
Tindora Mulapadu ~Andra Pradesh
Spicy and hot, fried, crunchy green tindora.
This dish was inspired by my friend’s mother’s cooking while my wife and I visited her a few years ago in Andra Pradesh. She lives in a beautiful home in a small town called Mulappadu. One of the best tindora (tindli) dishes I’ve ever tasted.
Channa Masala ~ northern India
Garbanzo beans soaked overnight and cooked with onion and fresh tomatoes and lightly chat spiced.
Malai Kofta ~ northern India
Assortment of freshly grated vegetables and home made cheese patties cooked with mild and lightly creamy sweet curry. Popular among young children.
Gobi Manchurian ~ Indo Chinese
Marinated fried cauliflower tossed with soy and red chili sauce.
Seafood Dishes
Lau Chingri ~ Bengal
Prawns/Shrimps with bottle gourd,
This is a wonderful mélange of vegetables and seafood, and bottle gourd (doodi)
Karwari Jhinga ~ Coastal Karnataka
Dry roasted prawns cooked with thick dark curry.
Goan Fish Curry ~ Goa
Top Goan seafood dish cooked in finely blended cayenne pepper and tamarind.
Chemmeen Curry ~Kerala
Shrimp cooked with roasted and finely blended spices and coconut.
Tala masala Macchi
Masala fried fish.
Ideal with cod or halibut. In India, rawas and bhetki are ideal.
This is a popular snack all over India served in most Dabha (bar or restaurant).
Prawn Chettinad ~ Tamilnadu
Prawns cooked in the Chettiyar House style.
Thick masala prepared with spices and crushed black pepper and coconut.
Kadai Zinga ~ Northwestern India
Spiced prawns cooked in an Indian wok.
Kori Chemmin ~ Kerala
Thin shrimp curry with coconut milk, cooked in a fiery hot coconut sauce. Best eaten with plain boiled rice.
Tandoori Fish ~ Mogul Raj, northern India
Fish marinade with light yogurt and spices. Cooked in an oven.
Jheenga Tawa Masala
Prawns in masala cooked on a flat griddle.
This is a Dish that is traditionally quickly stir-fried on a tawa (flat griddle). It is a Panjabi dish that you might find on the streets of Mumbai.
Rice Pulav and Biryani's
According to the entrees and your taste, you may choose from: brown rice, Kerala Kutri Mutta (red rice), Basmati and Jasmine rice.
